What do you do on your days off?


I think about baking and new recipes and new cake designs? I huff and puff that I need a couple days off, but when I'm away from the shop what do I do? I look up new recipes, think about baking and decorating and thing about what new cake techniques I can try.

Ever since I made my first pie crust at 14 I've been hooked with baking. My first pie was apple pie. My first cake was a scratch vanilla cake my friend and I made when we cut school and went to her house (her mom was there and took out all the ingredients we needed). What a cool mom! She and I would cut out from school to study for the Regents exam. Yes, goodie two shoes!

I love baking especially in the fall and winter. And that's the time of year I love cooking as well!

Roses & Ribbits and a Topsy Turvy Cake






I love these two cakes! The roses and ribbits is a traditional looking cake with swiss dots and buttercream roses. If you look closely you'll see frogs hiding between the flowers. Adorable!



The topsy turvy cake was a vegan, gluten free cake. Vegan gluten free cakes do not bake up very high. Even with the four layers, the cake was about three inches tall. We added a dummy cake underneath each cake to give it the height needed. All in all a fun, tasty, looking cake!

Remember the 70s and 80s when pillared cakes were all the rage? Okay, I don't either lol. This is my 3rd cake this year where brides have requested pillars. Most decide on pillars because they want the height of a big cake, but not the servings.

I'm beginning to like the pillared look. There's so many options on how to decorate in between the pillars. Flowers, fruit or how about putting delicate vines around the pillars or instead of flowers fall leaves and mini pumpkins for a fall wedding?

Lots of possibilities!

Can I have seconds?


What a great compliment when people go back for seconds adn thirds! A bride ordered two cakes for her wedding (bride and groom's cake) to serve approximately 300-350. Only about 200 rxvp'd so she thought she was going to have lots of cake left over. Well, she ahd about 20 servings left! People kept going back for seconds and thirds! What a great compliment!

I was so happy she didn't have much left over.

Mmm, that puts me in the mood for cake!

Coconut Cream Pie


What can I say? I don't get tired of baking. Cooking yes! Baking, no! I don't know what it is. I guess I love butter, cream and sugar way too much. That's not a bad thing for a baker.

My kids are not into sweets so I don't bake for my family as much as I used to unless I have company. My daughters only like pumpkin pie, while Rob will eat most any cake or pie set before him. But, what's the use in baking a whole cake or pie for two people?

I'm so glad my girls have friends who love cake and pie. When they come over it's my chance to bake again!

This was my first time making a coconut cream pie. I'm not a fan of coconut, but I wanted to give it a try. It was pretty good. I topped it with coconut flavored whipped cream. Yummy!

Steampunk Wedding Cake



I love this thing called Steampunk. I love the gadgets, the gears, pipes, etc. It reminds me of Sci-Fi which maybe it is? Reminds me of Dr. Who, The Wild West, the new Sherlock Holmes movie, etc.

I really loved the Steampunk side of this cake. Rob did a great job with the elements. I hope we get to make another one of these Steampunk cakes.

Another Vintage-y Cake


Here is another *Back In The Day* cake! Fresh fruit and some gumpaste orchids really pulled this together. Pillars are considered old style, but I think they still have their place in the world of wedding cakes. This cake was a Hummingbird Cake with cream cheese filling and buttercream icing impressed with a diamond pattern. (Yes, I did add cake sparkles!) I thought this came out great! I'm starting to feel nostalgic, although, it always seems better back in the *old days* than it really was.

BAM!


This one of several cakes we've delivered to Le Bam. This place is gorgeous! Marina, the owner, is an interior designer and she out did herself when she designed this place.

It has a large *tree* with crystals dangling from it. When you look up at the tree you see a night sky. There are different twists and turns to the place with fairies hiding in several places. The outside garden area is just as beautiful!

Mom or groom picked this cake out for the engagement party. A few people told me it took them back to the day. What day? Don't know lol, but I'm guessing years back this was popular?

I think it came out very pretty and did have a kind of garden, vintage feel to it.

BULL!



This was our first bulldog cake! We have another one for the end of the month except it will be sitting up. I think Rob did AWESOME on this cake. His carving skills are definitely there! I never quite get what he's doing when he takes the knife to the cake, but in the end it turns out great!

Of course, we are are own worse critics. For the next one I'd like a little more details on the paws, but all in all GREAT CAKE. Groom's parents were thrilled and asked us why we didn't make the wedding cake?

Cakes, Cakes, Cakes

As most of you know I don't get tired of cake!!!!

I do get tired. Since the car accident last May, it's been non-stop at the shop and my wrist is killing me. I've gone to an orthopedic doctor who has given me cortizone shots, exercides, pain killer. Referred me to physical therapist..that didn't help either. He toldme earlier this week there is nothing more he can do for me and recommended I go to a hand surgeon for a second opinion.

Uh, surgery? I cried. I'm so frustrated. I keep my hand in a splint as much as possible (I'm typing with it now.) The pain has woken me up many nights and there's nothing I can do. Dr. said it would have been better if it had broken. Uh, yeah well it didn't.

Anyway, on a sad not my mind turns to the Cake Girls from Chicago whose shop burned down a couple weeks ago. I'm sure they'll get themselves up and running soon. I have actually done one of theirdesigns for a wedding cake fortoday. Ididn't know whose design it was until I watched a rerun of Amazing Wedding Cakes. I will post it later when I upload pics. I didn't do it justice, but not too shabby!

Modern Pillow Cake


This was a nice change of pace from the traditional pillow cake. The whimsical stripes make it modern and fun. The shoe was challenging, but I think it came out great. It was based on the picture of a real shoe the client sent me.

Starry Night



This is my favorite of Van Gogh's paintings, so it was a thrill to get this cake order. I covered the cake in medium blue fondant, then *sketched* the main elements with a food marker. I used gell food color mixed with a little vodka to *paint* the design. Customer loved it. I was pretty pleased myself.

New Cake Techniques




I love trying new cake decorating techniques. The latest one I tried was stenciling with royal icing. These are two examples. You have to remember to clean the stencil between each section you do. The stencil can get messy which in turn can make the next section you do messy.

Cake Scrumptious Cake!


Who doesn't like cake? Apparentely, quite a few people don't. That's okay. I think I have enough love for cake for several hundred thousand. There's something spectacular about creaming the butter and sugar, then adding the eggs one at time, watching them get mix in the the creamed mixture. Nevermind the science behind the formula (did you know that cake/pies/cookie/etc recipes are actually formulas?). I don't really care about that (well kind of. If ingredients are not mixed properly in proper order the cake might be a flop.)

Then comes the flour and the milk or whatever the recipe calls for. Pour into the cake pans, bake. Oh, the smell!! Yummilicious!

Then the first bite of cake! Ahhhhhh! I love cake. My kids look at me and shake their heads. They wonder why I don't get sick of cake. I don't know why. All I know is I LOVE IT!

I love when customers are open to using fondant on their cakes. I love working with it!

Open House!

We had our open house yesterday and I offered our classic flavors as well as a couple of specialty flavors: Key Lime, White Chocolate Vanilla Bean and Bailey's Chocolate Cake. They went over really well. Two brides chose these flavors for each of their tiers!

Hmmm, I'll offer these next week, but want to offer a couple more specialty flavors. Any ideas?

Princess & The Frog



For some reason I have always liked the concept of kissing a frog and it turning into a prince. I don't know why. Its been one of my favorite fairytales for a long time. I haven't seen the Disney movie, but I've done a couple of cakes in that theme.

Ah! Maybe that's why I chose it as my logo? Duh! Also, whenever I was really sick my husband would make up a story about a lonely frog who met a beautiful, sad girl and made her laugh and they lived happily ever after.

I guess I did find my frog prince! To this day he makes me laugh and whenever I feel really sick, makes me soup and tells me the frog story.
